I love making banana bread. I usually use peanut butter but it of course doesnt flow with the paleo life we are going for. I could use almond butter or sunbutter, but we had extra blueberries laying around, so I thought what the heck, lets try paleo blueberry banana bread. The bananas werent on the verge of turning bad, because Jacob has an addiction. If there are not bananas here when he wakes in the morning it will get ugly, fast. I had to borrow two of his that were still good, with the promise of getting more today. To be genuinely paleo I would need to use a different flour, as opposed to the whole wheat flour I used, but I still have a small canister of my flour and coconut/almond flour is expensive. I’ll use mine up before I splurge.
This is a wonderful tasting and smelling recipe. As with most of my recipes its amazingly simple. Maybe im just a lazy baker and dumb things down and skip steps, but it usually works out great in the end. I know where to cut a corner and where not to by now. The majority of my prep time for this paleo blueberry banana bread was spent driving myself crazy trying to hunt down my loaf pan. I could not imagine where it was and I knew I hadnt left it with anyone yet it was gone. After about 20 minutes I remembered Paul had hijacked it to make some DIY room heater with Tea Lights . I hijacked it back.
- 1 large banana
- 2 tsp vanilla extract
- 4 eggs
- ½ cup almond flour
- 1 tsp cinnamon
- ¼ tsp baking soda
- ¼ cup melted coconut oil
- ½ cup blueberries
- preheat oven to 350f and grease loaf pan with coconut oil.
- mix vanilla, banana and eggs in one bowl, and dry ingredients (minus blueberries) in another.
- pour dry ingredients into wet mix and combine well. slowly fold in blueberries.
- pour mix into loaf pan and sprinkle cinnamon on top. bake for 55-65 minutes.
